Ingredients
For Litti:
2 cups whole wheat flour
1/2 tsp carom seeds (ajwain)
2 tbsp ghee (for the dough)
Salt to taste
Water (for kneading)
Directions
1Preheat the oven to 375°F (190°C). In a mixing bowl, combine wheat flour, carom seeds, salt, and ghee. Mix well and gradually add water to form a firm dough. Cover and let it rest for 15–20 minutes.
2In another bowl, prepare the sattu filling by mixing roasted gram flour, mustard oil, garlic, ginger, green chilies, lemon juice, nigella seeds, chopped coriander, and salt. If the mixture feels too dry, sprinkle a little water.
3Divide the dough into equal portions. Flatten each ball, place a spoonful of filling in the center, and seal it by pinching the edges. Shape into smooth balls.

Place the littis on a baking tray and bake for 30–35 minutes, turning once midway, until golden and crisp. Alternatively, cook them over hot coals for a smoky flavor.
